Ingredients:

  • 1 kg chicken breast or thighs

  • 1 large onion, chopped

  • 4 cloves garlic, minced

  • 2 stalks lemongrass, bruised

  • 3 kaffir lime leaves

  • 2 tsp salt

  • 1 tsp sugar

  • 1 tsp turmeric powder

  • 1 tsp coriander powder

  • 2 litres of water

  • 3 potatoes, peeled and diced

  • 2 carrots, peeled and diced

  • 3 spring onions, sliced

  • 2 cups of bean sprouts

  • 2 tbsp cooking oil

  • Fried shallots, for serving

  • Rice, for serving

For the spice paste:

  • 5 dried red chilies, soaked and seeded

  • 3 shallots, chopped

  • 2 cloves garlic

  • 1 tsp ginger

  • 1 tsp galangal

  • 1 tsp shrimp paste (optional)

Instructions:

  1. Prepare the spice paste by blending all the ingredients in a food processor until smooth.

  2. Heat the oil in a large pot over medium heat and sauté the spice paste until fragrant.

  3. Add the chicken and cook until browned.

  4. Add the onion, garlic, lemongrass, kaffir lime leaves, salt, sugar, turmeric powder, coriander powder, and water to the pot.

  5. Bring to a boil, then reduce the heat to low and simmer for 30 minutes or until the chicken is cooked through.

  6. Remove the chicken from the pot and shred into bite-sized pieces.

  7. Add the potatoes and carrots to the broth and cook until tender.

  8. Serve the chicken soto with rice and top with the shredded chicken, beansprouts, spring onions, and fried shallots.
