Bamboo Chicken
Bamboo Chicken, a dish of the Iban tribe in Brunei, has a secret that lies in the bamboo itself. While it is a cooking vessel, also an important ingredient lends a unique flavour to the dish.
COOKING TIME: 1 hour 30 minutes
INGREDIENTS
1 1/2 kg chicken
2 tbsp Ginger garlic paste
2 large onions, chopped
salt to taste
1/2 tbsp black pepper powder
4 green chillies, chopped
2 tbsp red chilli powder
3 tbsp coriander powder
1 tbsp turmeric powder
2 tbsp garam masala
3 tbsp chicken masala
4 tbsp oil
bamboo sticks for cooking
DIRECTIONS
Firstly, in a large mixing bowl, add chicken, red chilli powder, black pepper powder, coriander powder, turmeric powder, garam masala, chicken masala, ginger garlic paste, chopped onions, green chillies, and oil.
Mix everything well and stuff it inside a bamboo stick.
Once the bamboo stick is filled with chicken, stuff the remaining mixture in another bamboo stick.
Now, repeat this process until the marinated chicken is finished.
Now, insert a banana leaf inside each stick.
Then, cover its edge with banana leaf and tie.
After that, set the chunks of coal and woods on fire and place the bamboos on them.
Cook it for 30 minutes.
Flip and turn the sticks in between.
After 30 minutes, remove the bamboo sticks from the fire and keep them aside for 5-10 minutes.
Remove the cooked chicken on a banana leaf and serve.
