Kaju Anjeeri (Fig) Katli:

Ingredients:

  • 10-12 dried figs, soaked in water for 5-6 hours

  • 1/2 cup cashew nuts

  • 1/4 cup milk powder

  • 1/4 cup sugar

  • 1 tablespoon ghee

  • Pistachio slices for garnish

  • 1/4 teaspoon cardamom powder

Instructions:

  1. Grind the cashew nuts into a coarse powder.

  2. Drain the soaked figs and grind them into a fine paste with a little water.

  3. Mix the milk powder with the cashew nut powder.

  4. In a thick non-stick pan, add the sugar and 2-3 tablespoons of water. Stir constantly until the sugar melts and becomes thicker.

  5. Add the fig paste and stir constantly until it starts to pull away from the sides of the pan and form a dough.

  6. Add the cashew nut and milk powder mixture, and stir until well combined.

  7. Add the ghee and cardamom powder, and continue stirring until the mixture comes together and forms a soft dough.

  8. Remove from heat and transfer the mixture onto a flat surface lined with foil or parchment paper.

  9. Roll out the mixture thinly with a rolling pin.

  10. Garnish with sliced pistachios and let it cool.

  11. Once cooled, cut the katli into desired shapes and serve.
