Spicy Pineapple Curry

Ingredients:

  • 2 lbs fresh pineapple, peeled and cubed

  • 1 medium onion, chopped

  • 2 cloves of garlic, minced

  • 1 inch of ginger, grated

  • 2 green chilies, chopped

  • 1 tsp mustard seeds

  • 1 tsp cumin seeds

  • 1 tsp coriander seeds

  • 1 tsp turmeric powder

  • 1 tsp chili powder

  • 1 tsp fenugreek seeds

  • 1 tsp cinnamon

  • 2 cups coconut milk

  • Salt and pepper to taste

  • Fresh cilantro, for garnish

  • Rice, for serving

Instructions:

  1. In a pan, dry roast the mustard seeds, cumin seeds, coriander seeds, turmeric powder, chili powder, fenugreek seeds, and cinnamon until fragrant, about 2-3 minutes.

  2. Grind the roasted spices into a fine powder and set aside.

  3. In a large saucepan, heat some oil over medium heat and sauté the onion until soft, about 5 minutes.

  4. Add the garlic, ginger, and green chilies and cook for another minute.

  5. Add the spice mix and cook for another minute.

  6. Add the pineapple and stir well.

  7. Pour in the coconut milk and bring to a boil.

  8. Reduce the heat to low and simmer until the pineapple is tender and the sauce has thickened, about 15-20 minutes.

  9. Season with salt and pepper to taste.

  10. Serve hot with rice and garnished with fresh cilantro.
